November is finally here and there is one thing on everyone’s mind: Thanksgiving! A time to celebrate the bounty of the earth and spend precious time with loved ones.
This month’s beetbox is all about the seed to table cycle of potatoes. From growing and sprouting to cooking, there are so many things we can learn about potatoes! Did you know that potatoes do not grow from seeds but from “eyes” on the potato and they are one of the top crops grown in the U.S?
One of our favorite and child-friendly potato recipes is lemon-garlic roasted potatoes! A great way to get children involved in helping prepare a thanksgiving meal or for a classroom cooking project.
Lemon - Garlic Roasted Potatoes
Cook Time : 35- 40 Minutes | Serves: 3-5 People
- 2 lbs of potatoes
- ¼ cup of extra virgin olive oil
- 1 tablespoon of garlic
- 1 tablespoon of chopped parsley
- Juice of 1 lemon
- Salt and pepper to taste
Preheat your oven to 350oF.
Cut the potatoes into your desired size. In a large bowl, combine the potatoes with garlic, extra virgin olive oil, lemon juice, half of the chopped parsley.. Add salt and pepper to taste.
Bake the potatoes on a large baking sheet, covered for thirty minutes, or until the potatoes are tender. Bake the potatoes uncovered for the next ten minutes, or until the potatoes are golden brown.
Sprinkle the remaining chopped parsley on top of the potatoes.
